Sweet and Sour Veggie Chips

I cut up zucchini, yellow squash and sweet potatoes and marinated them in some olive oil,
lemon juice, raisins, fresh ginger and red pepper flakes. I let them marinate here for 2 days.

As you can see by the few veggie chips that are left.....I ended up eating most of the veggies
before I got them to the dehydrator. Now that they are dehydrated - I'll eat them next time
freshly marinated. (i got the recipe from who else? Rachel Talley!)

Mmmm... these look good to me. How was the ginger flavoring?

Stupendous - that is why I loved them so much. They are better just eaten marinated. Takes too long to wait for them to dry!

They are actually healthier for you not dehydrated too. You are still amazing. Alicia and I were just talking about you this morning. She thinks you are just as amazing as I do. Keep up the BEAUTIFUL pictures and FUN recipes. You are doing GREAT!! Rachel

Hi Rachel - I didn't know that it was healthier for you - but my brain told me to just forget the drying on this dish. See - I must be intuned! Thanks for your comment - I STILL have so much to learn from the pros - YOU AND ALICIA!!
