Corn Casserole

This corn casserole was fabulous. I cut the corn off a fresh cob and put everything (except the corn) in the food processsor to make it chunky.

2 cups fresh corn
1 cup chopped tomatoes
celery
1/4 c onion
1/2 c bell pepper
Sprinkle in some Italian seasoning and some cayenne pepper.
Mix it all together.
Serve with avocado, flax crackers, salad!
